I'm Feeling Hot Hot Hot


First off, who pissed off August?  Geesh, what happened to those 80 degree days?  I was kinda in heaven driving to and from work with the windows down and sweat not dripping down the crack of my back.  And being able to go on walks when I damn well pleased and not having to wait until the sun went down.  101 today, Lord help us.  Or at least me.  40 weeks pregnant plus 101 degrees, fair warning, I'm bitchy.  But anyways.....
I recently came across this new blog.  They have tons of great and easy recipes along with some other cool things.  I am all about the easy dinners lately.  Because I get home and just want to put on my pjs and do nothing.  So when I saw this post that linked to this recipe I knew I had to try it.  AND also because an old wives tale is spicy food helps induce labor.  Well, let me tell you something, that old wife is a lying fool.  I have ate this stuff TWICE now, along with a trip to Tequila's on Monday and I'm still pregnant.  But this soup is AWESOME.  And easy.  And cheap.  And it includes beer.  In fact just about all of the ingredients I got from Aldis (and already had on hand).  So yay!
Slow Cooker Chicken Taco Soup
Ingredients
1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 (1.25 ounce) package taco seasoning
3 whole skinless, boneless chicken breasts
shredded Cheddar cheese (optional)
sour cream (optional)
crushed tortilla chips (optional)

So here's my take.  It tells you the only can of stuff to drain is the corn, but I would totally drain one of those cans of diced tomatoes with green chilies too.  It was just a little TOO soupy for me.  Or maybe it was the fact that I used a 12 pack of beer.  Baha, kidding.  I only used one can.

Directions
1.Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.

2.Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

PS - who actually uses the word dollop?  I mean come on.  "Hey babe, how much sour cream do you want in this?"  "Oh just a dollop."  Really?  But no joke, pile on that sour cream, it was a PERFECT add to the soup.  So so good.  And so easy!!

Yum, I may have to make that soon, looks good. I tried anything and everything to get Ethan out. I ended up being induced at 41 weeks because he was just too stubborn and wouldnt come out. Here were my tricks that failed me (in the hopes that maybe one of them would work for you):

Spicy food
Looooong walks
Sit/bounce on an exercise ball
do the dirty
get a pedi (although I think you said you already did that one)

or just wait until Henry is willing and ready to make his debut. Good luck girl, Im hoping to read his arrival post sooner rather than later!

thanks Andrea!! i only have TWO things on that list that i haven't done yet. dreading one like no other, but i might just have to give it. lol.

I so wish I had seen this an hour ago! I just put a roast in the crockpot, but this is going on my list this week.

Yes, you and Josh need some alone time. It'll get your motor running. Haha.
