Good (and Easy) Eats


So I have to share this pretty good recipe with you all that I came across the other day.  It was super easy and quick!  Two things I like when it comes to dinner time.  I made the chicken the night before while I was making the other dinner, had it all cut up, let it cool and put it in a container and threw it in the fridge the night before so when I got home all I had to do was add the indregients.  Anyways, here ya go!

Cheesey Chicken Baked Burritos
3 1/2 cups cooked chicken (about three big chicken breasts, or four smaller ones)
1/4 cup sour cream
1 cup shredded cheese
1 can cream of chicken soup
1 package of taco seasoning

Mix it all together in a large bowl and then roll up the mixture in the tortilla.  Place in a clear dish.

Usually fills four or five tortillas.
Sprinkler some more shredded cheese on top of your finished product.
Cover with tinfoil and make at 350 for 20 minutes.
We made som refried beans with it on the side.  Yumm-o.

That sounds really good and easy, but I have a MAJOR issue with touching raw meat. I think this is why I dont cook as much as I should. Do cut the chicken breast up into little pieces? Ok so I might sound like an immature, but how do you cook the chicken before you put it in with all the other ingredients?
I swear I do cook. hahahah

Oh Katie, bless your litte heart.
Just put some frozen chicken breast and some water in a pan on the stove. Let them cook until they are done. Once they are done take them out and cut them into pieces. Easy peasy. Sometimes once I cut them up I put them BACK into the pan so that they will cook just a little more.
Either that or put them in your crock pot on high for about four hours. With the cream of chicken and then you don't have to touch them AT ALL. lol.
