Move Over Betty


Last night while Stella slept and slept and slept, I cooked and cooked and cooked.  No joke.  I almost was going to whack myself upside my head.  I cook, dinner, and that's about it.  I don't go out of my way and make fancy things, unless they are like super duper easy.  Like buffalo chicken dip is my speciality at most parties.  Chicken, cream cheese, butter, hot sauce, cheese, easy peasy.  Anyways, there was nothing on TV besides election results and I really only cared about a few of them and the ones that I really cared about were in Randolph County and those aren't really NBC material.  Anyways, so I decided to spend my night in the kitchen.  Brace yourselves folks.

First up: Hamburger Soup (thanks Erin!)
This was seriously E.A.S.Y. as pie.  But it's soup.  Baha, anyways.  Erin was telling me about this while she was doing my hair and the only directions she gave me were to just use hamburger, a couple cans of veggies, some fresh veggies, tomato soup, barley, and some other spices of your choice.  So I just totally winged it and no joke, it turned out awesome.  I have no idea why or how, but it's amazing.  Now I have dinner for tonight and I don't have to cook, just heat it up!  So I just used the pot that we use for chili.  Put my ground beef in the bottom of it and cooked it up with about a half chopped up onion.  I didn't drain the grease from the burger only because there really wasn't much to drain and I was lazy.  I had some frozen fresh tomato juice in the freezer left over from when I made my own spaghetti sauce back in August, so I threw that in there.  Along with a can of stewed tomatoes and a can of tomato sauce.  I added a can of corn, a can of green beans, a can of peas, and a can of asparagus (I only drained one can).  Then I peeled and chopped up about five carrots and five potatoes.  Added some salt and pepper and let her cook for about an hour.  No joke, it's amazing and SUPER easy.  Try it!

The next thing I made may just blow your mind (well for the people who really know me and really know my cooking skills). 
I made my own carmel. 
And again, AMAZING and super easy!!  I follow this site.  Tons of cool little crafts, recipes, etc.  Well I came across this recipe the other day.  I was dying for a carmel apple.  The recipe seemed pretty easy so I put it on the shopping list and got all my items.  Of course they then sat on the counter for about a week but hey, at least I made it!  So this is what you need:
3/4 cup brown sugar, 3/4 cup sugar, 1/3 cup butter, 1/2 corn syrup.  Mix those four things together in a skillet and bring it to a nice boil.  Remove from heat and let stand for a few minutes (4-5).  Then add 2/3 cup whipping cream (mix it with a whisk, works way better).  I then just poured it into a jar I had and put it in the fridge.  It will thicken as it cools.  About an hour later (totally wasn't cooled down yet though) I had to slice an apple and try it out.  It was FANTASTIC!
There is another link at the bottom for some homemade applesauce in the crock pot that I am totally going to try on Saturday.  Oh man I can just smell my house now.  LURVE it.
Oh and that apple cobbler you see at the bottom there, yeah I made that too. 
It's super easy and again amazing. 
Wow, how many times have I said easy and amazing in this post? 
Regardless, move over Betty Crocker, there's a new gal in town.

Where do you find all of these awesome sites?! I went to the site and they have TONS of great info!! I already found a new recipe on there I want to try...cinnamon bun pancakes!! And that apple cobbler...so making that sometime SOON!!

I like that little scratched out lazy comment about not draining grease from your hamburger. Me...I just leave it in because I am fairly certain that when you drain the grease, you drain the flavor. Just ask my hips.

I LOVE making hamburger soup. Open up the pantry and toss it all in a pot - my kind of meal! I always make it with cornbread muffins on the side and it's SO GOOD! Thanks for sharing the recipes!
